When I say fish taco, you probably would think of the fried crispy fish on a corn tortilla with some lettuce. This fish taco is not the fried kind, but it is absolutely delicious and satisfying. I love the hint of smokiness from the Spanish paprika. The slightly tangy coleslaw, the flaky cod and the creamy avocado were the perfect combination. Juicy fish and crunchy coleslaw. Excellent healthy meal. Enjoy!
I don’t celebrate Cinco de Mayo, but I like Mexican food. When I mention tacos, Bryan would always think of King Taco (Mexican restaurant in LA). Bryan and my in-laws have been to King Taco for years. No doubt their tacos are amazing delicious! They are simple and authentic. But it is a bit far from where Bryan and I live. I think this juicy chicken tacos can help our addiction for a while. It is also simple, but pack with flavors and very easy to make.
A few months ago, I saw this recipe on Annie’s Eats. I tried the recipe and it was amazing. The flavor was exactly like a taco, but it was in a form of pasta. The most important was that this pasta was easier to make than a taco. Minimum dicing work is perfect for a fast weeknight meal. The pasta was creamy and flavorful. Bryan and I liked this a lot! If you want the taco flavors, but you didn’t feel like cutting all the toppings. Then, this is your recipe!
