Fall is here! I can feel the cool air. Woo hoo! That is really exciting! I love Fall! Until a few days ago, I didn’t think about why I love Fall. After some throughout thinking, I have finally figured it out. When the weather starts to get cold and the wind is blowing outside, it is nice to stay at home. Turn on the heater, drink a cup of hot chocolate, and cuddle up with the loved ones. It is cozy, warm and sweet! That home sweet home feeling is what I love.

To welcome the arrival of Fall, I have this roasted vegetables recipe for you. It is made with some seasonal vegetables, like brussels sprouts and sweet potatoes. It is very easy, but flavorful with all the dried herbs. I also love the color of the dish. There are green, brown, orange, and white. Just amazing to look at. This is definitely a side dish I would make a lot at this Fall. Hope you will like it too!

Roasted Fingerling Potatoes with Rosemary

My neighbor has a huge bush of rosemary near his door. It started from a few sprigs to a 3 x 3-feet bush now. My neighbor is nice enough to let me pick use his rosemary. Woo hoo! Free herbs! Ever since then, I am always looking for dishes with rosemary. Roasted potatoes with rosemary is just a classic. And it sounds so much better with the cute and colorful fingerling potatoes. These potatoes go well with the pan seared rib-eye steak that I made last week, or chicken dishes.

Fish Pie

I stumbled upon this fish pie recipe online a while back. I just love it! It is like a shepherd’s pie, but with fish. I searched around online and found out that fish pie is a traditional British dish. Although this recipe is not completely the same as the original one. This is absolutely delicious. Flakey fish with creamy mashed potatoes and sweet vegetables all in one dish. Hope you will like this.

Southwestern Potato Salad

Bryan loves potato salad, and he always asks me to make some for dinner. I am fine with potato salad, but sometimes, I feel that they are a bit boring. This southwestern potato salad is definitely not simple. It had the smokiness from the chipotle sauce, and it was a bit spicy. It is very different and delicious, which fulfilled both Bryan and me. Ground Beef Shepherd’s Pie

Shepherd’s pie is just simply amazing! It is so comforting and it is a meal in one dish! There is meat, vegetables, and potatoes. This recipe is not very hard to make, but there maybe a bit more dicing work. However I think it is worth it at the end. I have made this in a dinner party, and everyone was satisfied. You can definitely make this dish a few hours ahead, and just save the oven part before dinner. I am sure your guests would enjoy the meal very much.

Portuguese Baked Creamy Coconut Chicken

Even though this is said to be a Portuguese style dish, I think it is more like Macau/Hong Kong influenced Portuguese style. It is probably invented during the time when Macau was under Portuguese control. This is a pretty classic dish in Hong Kong. You can find this in many Hong Kong style cafes. The dish was very creamy and satisfied. There was a hint of sweetness from the coconut milk. A scoop of steamed white rice is just perfect with this dish. It is just too good. Give this a try!
