Swiss Sauce Marinated Chicken Thighs with Noodles and Ginger Topping (Adapted from Homemade Tea Restaurant Signature Dishes)

2 servings

Ingredients:

–   4 boneless chicken thighs

–   2 packages instant ramen noodles

–   2 green onions (diced)

–   2 tablespoons minced ginger

–   3 tablespoons oil, plus 1 tablespoon (for cooking)

–   dash of salt

Marinade for chicken:

–   ½ onion (finely diced)

–   4 tablespoons Swiss sauce

–   3 green onions (diced)

–   3 garlic cloves (minced)

–   2 tablespoons soy sauce

–   1 tablespoon Worcestershire sauce

–   1 teaspoon dark soy sauce

–   1 teaspoon sugar

Directions:

  1. Put all the marinade ingredients and chicken thighs in a large Ziploc bag. Mix well. Marinate for 6 hours in the fridge.
  2. To make the topping, in a small heatproof bowl, combine the green onion, ginger, and salt.
  3. In a small pan over medium-low heat, warm up the oil. Pour the oil into the ginger mixture. Mix well.
  4. In a large pan over medium heat, heat up 1 tablespoon oil. Wipe off all the marinade on the chicken thighs with hand. Cook the chicken until golden brown and done.
  5. Bring a medium pot of water to boil over high heat. Cook the instant ramen by following the package instruction. Drain and place the noodles in two serving plates. Top with some ginger topping. Place the chicken thighs on the side. Serve immediately.

Tips:

  1. For a faster way to minced ginger, I grated the ginger with a grater.
  2. If you don’t like ramen, you can use steamed rice. I am sure that will still be amazing.
  3. You can find good ramen in Japanese or Chinese supermarket or online. I used Nissin demae ramen.
