I don’t always make Mexican food at home, because Bryan’s families are from El Salvador. We can easily eat those similar tasty food from Bryan’s mom. But when I make “Mexican” food, they are usually not very authentic and very different. This tostada is the perfect example. When I saw this recipe in Bev Cooks, I hesitated for a moment. Tostada traditionally is fried and it definitely does not top with guacamole. Because of the beautiful looking pictures and tasty combination, I decided to give it a try. It turned out to be amazing. The tortilla was crispy and great with melting cheese. The guacamole was creamy. Shrimps were well seasoned and meaty. These tostadas are good as main dish and good to serve with salad or veggies.

Baked Shrimp Scampi
My mother-in-law gave Bryan and I some shrimps. And, I wasn’t sure what I can make. I went online and found this wonderful shrimp scampi recipe. There maybe a lot of ingredients, but at least, everything is being cooked in the oven. I don’t have to stand over the stove. The best part about this recipe was the topping. The crispy panko and crunchy shallots gave the dish some texture. All the herbs brought out tons of flavors, and the shrimps shined through. It is a beautiful and delicious dish to please your guests.
Thai Pineapple Fried Rice with Shrimp
Bryan and I like to go to Thai restaurant. Our favorite is yellow curry, but pineapple fried rice also comes very close. When I came across something I really like in restaurant, I like to try to make it at home if I can. This pineapple fried rice is pretty good, and it is very easy to make. I used canned pineapple because it is a lot more convenient, but I am sure fresh pineapple would be better.
Creamy Pasta with Peas and Carrots
This pasta is absolutely delicious! The sauce was the secret. It was made with mascarpone cheese and cream cheese. I actually like this sauce more than a simple bechamel. The cheeses made the sauce very creamy and flavorful. With a tons of vegetables and some shrimps, this pasta is a good balance meal. And, it is very easy to make. Hmmm…… Yummy!
Creamy Lemon Shrimp with Rice
Last year, I saw Giada making this dish on TV. It looked so amazing, and I just had to try making it. I love it! It is creamy, fresh, and stuffing. Bryan is not a fan. He thinks the flavors combination is weird. Therefore, I only made this dish while Bryan can’t come home for dinner. Hmmmm…. I get to enjoy the whole thing by myself…. Yum yum! You can serve this dish with a vegetable side dish, then, you have the perfect meal. Give this recipe a try!
