I don’t celebrate Cinco de Mayo, but I like Mexican food. When I mention tacos, Bryan would always think of King Taco (Mexican restaurant in LA). Bryan and my in-laws have been to King Taco for years. No doubt their tacos are amazing delicious! They are simple and authentic. But it is a bit far from where Bryan and I live. I think this juicy chicken tacos can help our addiction for a while. It is also simple, but pack with flavors and very easy to make.
Juicy Chicken Tacos (Adapted from One Stop Cook)
12 tacos (3 servings)
- 1 ½ pound boneless skinless chicken thighs
- 12 (6-inch) corn tortillas
- 1 onion (finely diced)
- 8 – 10 tablespoons cilantro (finely chopped)
Marinade for chicken:
- 3 ½ cups water
- 1 ½ teaspoon salt
- 1/3 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 2 teaspoons onion powder
- 2 ½ teaspoons chili powder
- 1 ½ teaspoon dry oregano
- ¼ teaspoon cumin powder
- In a large saucepan over high heat, combine the chicken thighs and the marinade ingredients. Bring to a boil and boil for 10 minutes. Reduce to medium-low heat and simmer for 30 minutes with the lid partially covered.
- Meanwhile, in a medium bowl, combine the onion and cilantro. Mix well and set aside.
- Back to the chicken, take them out on a chopping board and shredded them with two forks. Put them back to the saucepan and cook until liquid has been reduced to a 1-inch mark. Reduce heat to low and keep warm.
- For the tortilla, cook them up over the flame over medium heat until slightly brown and soft on both sides. Watch carefully because the tortillas can be burnt easily. Transfer the cooked tortilla to a tortilla warmer or a plate with an aluminum-foil-cover.
- When everything is ready, place a tortilla on a plate and top with chicken and onion mixture. Serve immediately.
- If you can find the small (3-4 inch) tortillas, I would use those. Use two together for one taco. I love the small tortillas, but they are not easy to find in a regular supermarket.
- If you don’t want to heat up the tortillas over open flame, you can toast them on a lightly greased pan. Also, you can wrap 6 tortillas in a wet paper towel and cook them in the microwave for 30 seconds on high.
- Feel free to change-up the toppings, like tomatoes and cabbage.
